Whole Fish and Fish Fillets

Fresh Fish are caught daily and processed the same day then are quality graded and packed for either Fresh Export or IQF snap frozen at -30° C.

Main species are: Barramundi, Snapper, Grouper, Milkfish, Emperor, Barracuda, Swordfish, Mahi Mahi Tuna species and many many others.


Barramundi( Lates Calcarifer )

Our Barramundi are either Farmed or Wild fish

Sizes of fresh Whole fish G&G de-scaled range as

  • 500 - 700 grams / fish
  • 700 - 1000 grams / fish
  • 1000 - 2000 grams / fish
  • 3000 - Up grams / fish


Barramundi Brisbane

Ingredients:

  • 1 kilo Barramundi (2.2 lbs)
  • 1 cup Court Bouillon
  • 1 1/2 cups orange juice
  • 2 oranges
  • 2 tablespoons Grand Marnier
  • 2 teaspoons cornflour.




Poach fish in court bouillon, remove to serving dish.
Heat cup of orange juice and grand marnier, add orange peel and boil.
Blend cornflour with remaining orange juice - arrange orange segments down centre of fish and cover with sauce.
